Version: 4.0.47-->\n<p><em>Por Salvador Altamirano\/Zunoticia<\/em><\/p>\n\n\n\n<p><strong>Huejutla, Hgo.-<\/strong> Aunque la torta llamada &#8220;guajolota&#8221;, consistente en un tamal dentro de un bolillo, tiene su origen en el Estado de Puebla, seg\u00fan investigaciones, desde hace muchos a\u00f1os se convirti\u00f3, por su gran aceptaci\u00f3n, en emblem\u00e1tica y t\u00edpica de la Ciudad de M\u00e9xico.<\/p>\n\n\n\n<p>Se considera un antojito popular, es decir, comida callejera, que se consume especialmente en las ma\u00f1anas, por lo que se puede considerar desayuno, la cual tiene un profundo arraigo en Huejutla y se vende en calles adyacentes al Mercado municipal.<\/p>\n\n\n\n<p>Por tal motivo, todas las ma\u00f1anas en la Avenida Constituyentes, en el sector de la colonia Los Cantores, Jos\u00e9 Luis Hern\u00e1ndez y su esposa estacionan en una esquina un triciclo adaptado para la venta de tamales envueltos en hoja de ma\u00edz, adaptaci\u00f3n que es una tradici\u00f3n mexicana que combina la movilidad con la estabilidad necesaria para transportar el producto y mantenerlo caliente en una vaporera llamada tamalera.<\/p>\n\n\n\n<p>Entrevistado respecto a d\u00f3nde aprendi\u00f3 a preparar los emblem\u00e1ticos tamales, cuyo origen no es huasteco, coment\u00f3 que su mam\u00e1 es originaria de Puebla, quien le ense\u00f1\u00f3 su preparaci\u00f3n, a cuya venta se dedica desde hace siete a\u00f1os.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"576\" src=\"https:\/\/www.zunoticia.com\/noticias-de-hidalgo\/wp-content\/uploads\/2025\/12\/eZy-Watermark_14-12-2025_03-23-43-4130p.m-1024x576.jpg\" alt=\"\" class=\"wp-image-618444\" srcset=\"https:\/\/www.zunoticia.com\/noticias-de-hidalgo\/wp-content\/uploads\/2025\/12\/eZy-Watermark_14-12-2025_03-23-43-4130p.m-1024x576.jpg 1024w, https:\/\/www.zunoticia.com\/noticias-de-hidalgo\/wp-content\/uploads\/2025\/12\/eZy-Watermark_14-12-2025_03-23-43-4130p.m-300x169.jpg 300w, https:\/\/www.zunoticia.com\/noticias-de-hidalgo\/wp-content\/uploads\/2025\/12\/eZy-Watermark_14-12-2025_03-23-43-4130p.m-768x432.jpg 768w, https:\/\/www.zunoticia.com\/noticias-de-hidalgo\/wp-content\/uploads\/2025\/12\/eZy-Watermark_14-12-2025_03-23-43-4130p.m-1536x864.jpg 1536w, https:\/\/www.zunoticia.com\/noticias-de-hidalgo\/wp-content\/uploads\/2025\/12\/eZy-Watermark_14-12-2025_03-23-43-4130p.m-1568x882.jpg 1568w, https:\/\/www.zunoticia.com\/noticias-de-hidalgo\/wp-content\/uploads\/2025\/12\/eZy-Watermark_14-12-2025_03-23-43-4130p.m.jpg 1600w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p>Agreg\u00f3 que, aunque ese tipo de tamal envuelto en hoja de ma\u00edz no es de elaboraci\u00f3n com\u00fan en la Huasteca, por su buen sabor la guajolota tiene un gran arraigo en Huejutla, la cual consiste en un bolillo con un tamal adentro, ya sea de chile verde con pollo, de rojas o mole, variante para quien la requiere, cuyo nombre proviene porque asemeja, por lo grande, la parte trasera de un guajolote,<\/p>\n\n\n\n<p>Para finalizar, subray\u00f3 que, como la guajolota es de consumo temprano, se acompa\u00f1a con una bebida caliente, ya sea caf\u00e9 o si se prefiere champurrado, que es una variante del tradicional atole mexicano, bebida espesa, arom\u00e1tica y nutritiva.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Por Salvador Altamirano\/Zunoticia Huejutla, Hgo.- Aunque la torta llamada &#8220;guajolota&#8221;, consistente en un tamal dentro de un bolillo, tiene su origen en el Estado de Puebla, seg\u00fan investigaciones, desde hace muchos a\u00f1os se convirti\u00f3, por su gran aceptaci\u00f3n, en emblem\u00e1tica y t\u00edpica de la Ciudad de M\u00e9xico.
